Description
One of my favorite things is having some soup around to eat during the day. Soup is great because it helps fight sickness and you can basically use leftover ingredients to throw in a pot and let it simmer. Sometimes I’ll have some extra sausage lying around from last night so I’ll throw together my Slow Cooker Spicy Sausage Soup.
This soup has a little spice to it to make it super tasty, but not enough to make your head explode. Which is great for me because I really only like the sinus bombs when I’m feeling sick. This is a great midday snack during the winter when it’s cold outside and your need something to warm you up!

- 1 lb ground beef
- 1 lb bulk spicy sausage (casings removed)
- half a large onion, chopped
- 2 cups chopped carrots
- 2 cups chopped celery
- 1 green bell pepper, chopped
- 2 tsp salt
- 1/4 tsp pepper
- 1 tsp dried oregano
- 2 or 3 garlic cloves, minced
- 14 1/2 oz can stewed tomatoes with chillies
- 14 1/2 oz can green beans
- 1/4 tsp chili powder
- 1 cup instant rice, uncooked
Instructions
- Combine beef, sausage, and onions. Form into balls. Place in slow cooker
- Add all remaining ingredients, except rice. Stir gently so as not to break up the meatballs
- Cover. Cook on Low 6-8 hours. Stir in rice 20 minutes before serving
- Serve with rolls or cornbread
