Instant Pot Garlic Edamame

Here’s my instant pot garlic edamame recipe, the perfect little vegetable side dish to your main course. Easy to make and delicious with garlic!

Instant Pot Garlic Edamame

This is one of those dishes that I love to make to switch it up a little bit. I don’t usually make this but I’ll make it sometimes with my chicken dishes and I find it goes quite well. It’s a perfect little spicy dish that you can scoop onto your plate with your main dish. Normally I’d see these made that are quite bland, but with my garlic sauce it spices it right up!

I began making this dish after my son reported that his friend at work would normally make edamame every day with his rice and chicken. I thought to myself that’s awful strange I wonder why he does that. He must really like edamame. Well it turns out that he just thought edamame was really healthy and with it being such a low cost option he pretty much ate it every day.

So my son tells me about this and I thought that I could make the recipe of just bland edamame better with a little spicy sauce. At the same time I wanted to be able to make a bunch of it for meal prep as well since that’s what his friend was making it for. Save time and money, and have a really great tasting meal?

I think I accomplished what I set out to do because my son’s friend tried it and he love it! Legend says that he is now making edamame with this recipe instead!

Instant Pot Garlic Edamame

Ingredients:

1 tbsp soy sauce

1 tbsp honey

1 tbsp rice vinnegar

1/2 tsp red pepper flakes

1 tsp cornstarch

1 1/2 cups water

1 lb frozen shelled edamame

1 tsp high smoke point oil

1 tsp toasted sesame oil

2 cloves garlic, chopped

Instant Pot Garlic Edamame

Instructions:

In a small bowl, stir together the soy sauce, honey, vinegar, red pepper flakes, and cornstarch until the cornstarch dissolves.

Pour the water into the instant pot and place a steamer basket in the pot.

Add the edamame to the basket.

Secure the lid and set the pressure release to sealing.

Select the steam setting and set the cooking time for 1 minute at high pressure.

Perform a quick release by moving the pressure release to venting.

Open the pot and with heat mitts, remove the steamer basket full of edamame.

Then lift out the inner pot and pour out the water.

Return the inner pot to the instant pot housing.

Press the cancel button to reset the cooking  program, then select the saute setting and heat the high smoke oil and sesame oil together.

Add the garlic and saute for about 1 minute, just until the garlic begins to take on a bit of color.

Add the steamed edamame to the pot and stir to coat them with the garlic.

Pour in the soy sauce mixture and saute for about 2 minutes, until the sauce has thickened and is coating the edamame.

Pour the edamame into a bowl and serve hot.

  14. Pour the edamame into a bowl and serve hot.

Recipe sounds good but please edit to remove shelled- shelled means you have removed edamame from the shells.
