Slow Cooker Split Pea Soup

Here’s my slow cooker split pea soup recipe perfect to warm you up on a cold winter day. Easy to make, nutritious, and makes a large helping.

Slow Cooker Split Pea Soup

Recently I met my son at the local co-op for lunch and we both decided to pick up some of the hot soup they had available. I noticed that they had some split pea soup there so I grabbed that and it was delicious. It made me remember my own recipe for split pea soup that I had lying around.

I felt inspired to give split pea soup another try and broke out my crock pot. One of the best things about a crock pot is that you can just set it and forget it. This isn’t ideal if you need dinner in an hour but if you plan ahead you can make the food at night and leave it overnight while you are sleeping to wake up to and have it ready. Why wait for 7-8 hours when you know ahead of time that you will be sleeping for that long. Make cooking easier!

Split pea soup is such a hearty comfort food that anyone can enjoy, even vegans! If you wanted to modify this meal for vegans just exclude the ham and you’re good to go. Ether way, you have a slow cooker full of delicious soup for yourself or to serve to your family.

Not only is this a very hearty nutritious meal, but it’s also very inexpensive. So you’re getting a lot of value with this recipe to allow you to focus on all your other jobs during the day!

Slow Cooker Split Pea Soup

Ingredients:

2 carrots

2 celery stalks

1 onion

1 parsnip

1 leek

1 tomato

1 ham hock

1 3/4 cups dried split peas, washed with stones removed

2 tbsp olive oil

1 bay leaf

1 tsp dried thyme

4 cups chicken broth

4 cups water

1 tsp salt

1/4 tsp pepper

2 tsp chopped fresh parsley

Slow Cooker Split Pea Soup

Instructions:

Cut all vegetables into 1/4 inch pieces and place in slow cooker

Add remaining ingredients except salt, pepper, and parsley

Cover and cook on high for 7 hours

Remove ham hock

Shred meat from bone and return meat to pot

Season soup with salt and pepper

Stir in parsley

Serve
