Slow Cooker Ham And Cheese Soup

Here’s my slow cooker ham and cheese soup, the perfect buttery thick soup made to fill you right up. Ham and cheese goes so well together!

When my son was going to grade school I would make him lunch every day as well as lunch for my other kids as they were a little older but still in grade school. One of his favorite meals was a ham and cheese sandwich. I thought this was pretty funny because it’s such a simple meal. It’s funny what gets into the heads of kids and he thought it was a gourmet meal and would request it a lot. For variety’s sake, I’d make a number of different meals for him but he always loved this one.

Fast forward a couple years and I was experimenting with making some soups in my crock pot so that I could leave it overnight and have it ready for the next day. We were talking about how funny it was that he would love ham and cheese and he wondered if we could make a ham and cheese soup. I thought sure seems reasonable!

What we came up with was a ham and cheese soup with some potatoes and broccoli thrown in to balance out the flavor and for substance. I think it turned out great and now it’s my son’s favorite soup!

Slow Cooker Ham And Cheese Soup

Ingredients:

2 cups potatoes, cubed (you decide whether to peel or not).

1 1/2 cups water.

1 1/2 cups cooked ham, cubed.

1 large onion, chopped.

3 tbsp butter or margarine.

3 tbsp flour.

1/4 tsp black pepper.

3 cups fat free milk.

6 ozs low fat shredded cheese.

1 cup frozen broccoli, thawed and chopped.

Slow Cooker Ham And Cheese Soup

Instructions:

Combine all ingredients except cheese and broccoli in slow cooker.

Cook on low 6-8 hours.

Add cheese and broccoli.

Stir well.

Cook an additional 15 minutes, or until cheese is melted and broccoli is warm.

Notes:

Wilt the onion in the microwave or saute it in a nonstick skillet, so that it is soft and its flavor well blended when the soup is served.

Cook the broccoli lightly in the microwave if you want to make sure it is softened when served.
