Slow Cooker Broccoli Soup

Here’s my slow cooker broccoli soup recipe. Tangy and tasty, perfect for throwing together in a pinch with minimal ingredients and low prep time.

Many years ago I was going to bring some kind of dish to my cousin’s house for a get together with a bunch of friends. Everyone was bringing different things for a pot luck and I thought to myself what am I going to bring? I noticed that I had an abundance of extra broccoli in the house because my son was trying a new diet of strictly chicken breasts, rice and broccoli. He called it a bodybuilding diet.

In any event, with all the excess broccoli hanging around I thought I’d whip up a dish that featured the broccoli. Being as I was going to bring a crock pot for my dish to keep it warm all day I thought why not make a nice broccoli soup. I tried this simple recipe and found it to my liking because it’s simple and tasty.

I already had the broccoli covered so all I had to do was search around the kitchen for the other items and I was in. Fortunately I already had the other items so I was good to go on starting the dish. It took no time to make and with the little ingredients involved you’d think it wasn’t that tasty, but it turned out great!

Everyone at the party had a bowl and the reviews were very favorable. Highly recommend you give it a try for your own party. Let me know what your guests think!

Slow Cooker Broccoli Soup

Ingredients:

2-3 lbs fresh broccoli.

1 tbsp margarine.

Water to cover in the pot.

2 cups skim milk.

1/2 cup Velveeta light cheese, cut into small cubes.

Slow Cooker Broccoli Soup

Instructions:

Chop broccoli.

Remove any tough stalks and discard.

Place chopped broccoli, margarine, and water to cover in slow cooker.

Cover.

Cook on High 1-2 hours.

Add skim milk.

Cook for an additional 15 mintues.

Stir in 1/2 cup velveeta light cheese and continue cooking until cheese is melted into soup.
