Slow Cooker Corn Chowder
Here’s my slow cooker corn chowder recipe perfect for a sweet and savory dinner. The perfect compliment to a nice sandwich is a nice heaping serving!
My Son would constantly make his own dishes for his meal prep during the week and every now and then he’d make some chili. One of his main ingredients that he uses for his chili is a can of corn. Every now and then I’ll be looking to make a nice soup and I find one of his extra cans of corn in the cupboard. I’ll swipe it and make this soup when I get the chance and he hasn’t ever noticed. If he did, I never heard any complaints because usually he’s digging into the nice corn chowder I made for him!
This recipe calls for those packages of corn that I would heat up on a stove top back in the day for a nice side dish for dinner. You can also just use an equivalent can of corn and it will work just fine.
This rich and creamy soup is an absolute delight and goes over very well. My husband is always a fan of corn on the cob and he really likes this as a nice change of pace. Whenever I make this I notice he has a few bowls and scarfs it down really quick.
Fortunately for me, this recipe is super easy to make!
Ingredients:
6 slices bacon, diced.
1/2 cup chopped onions.
2 cups diced peeled potatoes.
2 10 oz pkgs cream style corn.
1 tbsp sugar
1 tsp worcestershire sauce.
1 tsp seasoned salt.
1/4 tsp pepper.
1 cup water.
Instructions:
In skillet, brown bacon until crisp.
Remove bacon, reserving drippings.
Add onions and potatoes to skillet and saute for 5 minutes.
Drain.
Combine all ingredients in slow cooker.
Mix well.
Cover.
Cook on low for 6-7 hours.
Notes:
You can make a clam corn chowder by draining 2 cans of minced clams and adding it to the mix.
You can substitute 1 quart home frozen corn for the store bought frozen and canned corn.
