Chicken A La King

Here’s my recipe for Chicken A La King perfect for a quick tasty dinner for the family. Creamy mushrooms and peppers mix well for a perfect dinner!

Sometimes I’m sitting around trying to think of what to make and I remember that I have some chicken. I like the flavor mixture of chicken with mushrooms, so I like to make chicken a la king. The creamy sauce adds a texture and a flavor to the chicken that really brings everything together. This will feed a family of 4.

I really love this recipe as I”m able to throw it together relatively quick and it tastes sooo good! A lot of the time I serve this with my pasta underneath in either spaghetti or bow tie pasta, but you can also just serve it by itself or with other side dishes.

One of the great things about this recipe is that I like to make a really large amount of it and just spread it on top of some pasta that I make with it. On each plate I’ll put a layer of pasta down and on top scoop a bunch of the Chicken A La King out of a serving pan that I’ll put on a hot plate. I’ll also put the extra pasta in a large serving bowl. This way if people want seconds they can just scoop some pasta on their plate and then scoop some of the chicken on second. Perfect because the sauce from the chicken a la king goes so well with the pasta.

Chicken a la king

Ingredients:

1/3 cup mushrooms (2 oz can)

1/4 cup chopped green pepper

1/4 cup butter

1/4 cup Gold Medal Flour

1/2 tsp salt

1/8 tsp pepper

1 cup chicken broth

1 cup cream (20% butterfat)

1 cup diced cooked chicken

1/4 cup chopped pimiento

 

Instructions:

Saute mushrooms and green pepper in butter.

Blend in flour and seasonings.

Cook over low heat, stirring until mixture is smooth and bubbly.

Remove from heat.

Slowly stir in broth and cream.

Bring to boil over low heat, stirring constantly.

Boil 1 min.

Add chicken and pimento.

Continue cooking until meat is heated through.

Serve hot in patty shells, pastry cases, biscuit rings, or timbale cases; or over toast points, noodles, or fluffy rice.
