Happy New Year Pork Dinner
The perfect dinner for New Years is my Pork Tenderloin recipe. The perfect mix of apple sauce sauerkraut and pork. This will go over great with the family.
Having dinner around the holidays can get extremely stressful, so why not make it easier on yourself by making this extremely easy and tasty pork dinner? This dinner will feed a family of 5 and possibly sneak in another one by making more sides.
I remember back when my son Michael was in high school he would especially like this meal. I made it more frequently back then but he would love it after his football games. I remember him telling me that he would be out on the field extremely cold and would sometimes have thoughts of the pork dinner he was going to have after he got home to warm him up.
The trouble was that when he got home from the games he would be so extremely hungry that he could finish a whole tenderloin by himself. No problem I just made sure to buy another tenderloin. It also wasn’t a big problem because by the time I was making this dish a lot, my other children were already out of the house so it was just my son, my husband, and myself to feed.
Anyway, one year I posed the question to my son what he thought I should make for New Years Day dinner and he responded, “how about pork tenderloin?” Seemed like an easy choice for him.
Ingredients
Two pork tenderloins
One large (or two small) bags of fresh sauerkraut
3 tablespoons of brown sugar
2 apples (any variety)
Instructions
Rub the pork tenderloins with good olive oil and sprinkle with salt and pepper
Sear the pork on all sides
Butter a 9 x 13 baking pan and add spread sauerkraut (Note: if the sauerkraut has a lot of liquid drain the bag about a quarter of cup).
Peel one apple and put very thin slices throughout the saurkraut. Sprinkle the brown sugar on top and mix the apples and sugar gently through the sauerkraut.
Place the two pork tenderloins on top of the sauerkraut.
Take the second apple (no need to peel) and cut into thin wedges. Lay the wedges on top of the pork. Cover the baking dish with foil and put in preheated 400 degree oven for thirty minutes.
Remove the foil and cook for another 30 minutes.
Serve with mashed potatoes and homemade applesauce.

We had our annual Christmas feast on December d. It is always pozole, chicken tostadas, rice, beans, and tamales. We typically make chicken, pork, beef, vegetable and sweet ones. The sweet ones have pineapple, brown sugar and coconut! The feast is topped off with champurado this year s the flavor was caqueta! I have to admit that my favorite is a sweet corn tamal or a butter pecan tamal. Feliz Navidad!
